Yellow Tea Pu-Erh
Yellow teas have a distinct, and yet subtle flavor that is prized in China. Pu'erh is produced in the Yunnan province of China, and is a unique and unusual slightly aged tea that is famed for its medicinal qualities.This particular tea is generally aged for 6 months to 1 year, and approximates the result of the long aged Pu'erh tea process. It is unusual because unlike other teas, it uses an accelerated fermentation process called The Wo Dui (wet-piling) process, which involves piling, dampening, and turning the tea leaves. This process ensures even fermentation. Pu'erh is the most oxidized form of tea and can mellow and improve with age like fine wine. It produces a dark red liquor with a full-bodied, earthy taste.
